Fried Calamari

 

Ingredients

  • 1 pound calamari rings and tentacles

  • 1 cup buttermilk

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon paprika 

  • 1/2 teaspoon garlic powder

  • 2 teaspoons salt

  • 1/2 teaspoon freshly ground black pepper

  • 2 teaspoons fresh parsley, chopped

  • Extra-virgin olive oil for frying


Directions

Place the calamari in a bowl with the buttermilk. Stir to combine. Cover the bowl and refrigerate for 30 minutes.

Heat extra-virgin olive oil in a large pot to 375 degrees F. Meanwhile, mix the flour, paprika, garlic powder, salt, and pepper in a bowl. Stir to combine.

Remove each piece of squid from the buttermilk and dredge in flour mixture. Repeat until all pieces are coated.

Place 8-10 pieces of squid in the oil. Cook for 2-3 minutes each, or until golden brown.

Remove the squid from the oil and drain on paper towels. Repeat until all pieces are cooked.

Plate, sprinkle with chopped parsley, and serve.
