Fried Calamari
Ingredients

1 pound calamari rings and tentacles

1 cup buttermilk

1 1/2 cups all purpose flour

1/2 teaspoon paprika

1/2 teaspoon garlic powder

2 teaspoons salt

1/2 teaspoon freshly ground black pepper

2 teaspoons fresh parsley, chopped

Extra-virgin olive oil for frying
Directions
- Place the calamari in a bowl with the buttermilk. Stir to combine. Cover the bowl and refrigerate for 30 minutes.
- Heat extra-virgin olive oil in a large pot to 375 degrees F. Meanwhile, mix the flour, paprika, garlic powder, salt, and pepper in a bowl. Stir to combine.
- Remove each piece of squid from the buttermilk and dredge in flour mixture. Repeat until all pieces are coated.
- Place 8-10 pieces of squid in the oil. Cook for 2-3 minutes each, or until golden brown.
- Remove the squid from the oil and drain on paper towels. Repeat until all pieces are cooked.
- Plate, sprinkle with chopped parsley, and serve.
